The Hemingway Mojito

One of my personal favorite summertime drinks. This recipe was first discovered by me in a NYC Cuban restaurant near Times Square. The Pink Grapefuit juice actually accentuates the lime juice and the grenadine gives this drink a very tropical look.

  1. 1⁄2 each Fresh Lime
  2. 3 sprigs Fresh Mint
  3. 2 Tbsp. Granulated Sugar
  4. 1⁄4 cup Pink Grapefruit Juice
  5. 1⁄4 cup White Rum
  6. 1 Tbsp. Grenadine Syrup
  7. 1⁄3 cup Club Soda
  8. 1 sprig Fresh Mint
  9. 1 cup Ice
  1. In a sturdy glass or cocktail shaker muddle together lime, the first quantity of mint leaves and sugar.
  2. Add pink grapefruit juice and rum then stir.
  3. Strain the Mojito mixture over a tall glass filled with ice, then add the Grenadine syrup, the club soda and a sprig of fresh mint for garnish.
