Scampi Saute with Garlic and Chilies

There are those out there who think this is the ONLY way shrimp should EVER be prepared. And it's hard to argue with them. Shrimp's natural ingredient pairings of garlic, lemon, wine, olive oil...that's a pretty good start?? But adding all that in addition to the "kick" of some fresh chile's and fennel and you give this classic dish a decidedly modern flair and attitude.

  1. 2 lbs. Jumbo Shrimp
  2. 4 Tbsp. Extra Virgin Olive Oil
  3. 4 cloves Garlic Cloves, thinly sliced
  4. 4 each Hot Red Jalapenos, seeded and thinly sliced
  5. 1⁄2 cup Dry White Wine
  6. 4 Tbsp. Extra Virgin Olive Oil
  7. 1⁄4 cup Fresh Mint Leaves
  8. 1⁄4 cup Fresh Fennel Fronds
  1. Split shrimp in half lengthwise.
  2. In a 12" to 14" saute pan, heat oil until smoking.
  3. Add shrimp, garlic and chilies and cook until shrimp have turned red on one side but garlic is still light brown.
  4. Add wine and extra virgin olive oil and turn shrimp over to cook 1 more minute.
  5. Add mint and fennel and toss through.
  6. Pour in warm serving bowl and serve.
