Half a quiche style recipe but also similar to a savory bread pudding, this is an excellent breakfast entree and can be assembled the day ahead for cooking the morning of.

Ingredients

  • 1 – 1 lb. loaf Italian or French bread, cut into 1″ cubes
  • 3 cups Cooked Ham, chopped
  • 3/4 lb. Monterey Jack / Cheddar Cheese Blend, shredded
  • 1/2 cup Sweet Onion, chopped
  • 1/3 cup Mixed Color Bell Peppers, chopped
  • 3 Tbsp. Butter
  • 8 Extra Large Eggs
  • 3 1/2 cups Half and Half (milk can be substituted)
  • Salt & Pepper, to taste

Instructions

  1. Place bread, ham and cheese in large mixing bowl and toss.
  2. Saute onions and pepper in the butter until tender (do not brown) then add to bread mixture and toss.
  3. Grease a 13″ x 9″ baking dish and fill with the bread mixture.
  4. In a separate bowl, beat together eggs, half and half and season with salt and pepper to taste.
  5. Pour egg mixture evenly over bread mixture. Cover and refrigerate overnight.
  6. Remove from the refrigerator 30 minutes before baking.
  7. Bake, uncovered, at 350 degrees for 55-65 minutes or until a knife inserted near the center comes out clean.
  8. Serve immediately.

Notes

Optional additional ingredients to the mixture are sauteed mushrooms and diced tomato.
