Ingredients

  • 1 package Nino’s Sicilian Sausage
  • 2 red bell peppers, julienned (thin strips)
  • 3 Yukon Gold potatoes, peeled and sliced into ¼-inch rounds
  • 1 red onion, sliced
  • ¾ cup olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat oven:
Preheat your oven to 400°F (200°C).
  2. Prep the vegetables:
In a large mixing bowl, toss the sliced potatoes, bell peppers, and red onion with ½ cup of the olive oil, and season generously with salt and pepper.
  3. Prepare the sausage:
Cut the Nino’s Sicilian sausage into halves or thirds (optional, or leave whole if preferred).
  4. Assemble in baking dish:
In a large baking dish or sheet pan, arrange the seasoned vegetables in an even layer. Nestle the sausage pieces throughout the vegetables. Drizzle the remaining ¼ cup olive oil over the top.
  5. Roast:
Roast in the preheated oven for 30–40 minutes, flipping the sausage and stirring the vegetables halfway through, until the sausage is browned and cooked through and the potatoes are fork-tender.
  6. Finish & serve:
Remove from the oven and let rest for 5 minutes. Serve hot, garnished with fresh herbs if desired (like parsley or oregano).

Optional Add-ons:

  • Add crushed red pepper flakes for a little heat.
  • Serve with a wedge of lemon for a bright finish.
  • Pairs well with a glass of dry red wine or crusty Italian bread.

Notes

Here are some excellent pairing options for Sicilian Sausage with Potatoes & Peppers:

Side Dish Pairings

  1. Bitter Greens Salad (Arugula or Radicchio) with Lemon Vinaigrette – Peppery or bitter greens balance the richness of the sausage and potatoes, while a sharp lemon dressing cuts through the fat nicely.
  2. Roasted Broccoli Rabe with Garlic & Chili Flakes – A bold green with bitter, earthy bite that complements the sweet peppers and sausage.
  3. Grilled or Marinated Zucchini – Light and tender with a herby marinade — keeps things summery and Sicilian.
  4. Tomato & Cucumber Salad with Red Wine Vinegar – Cool and acidic, balances the warmth and fattiness of the main dish.
  5. Warm Italian Bread or Focaccia – For soaking up those flavorful oils from the pan — essential if you serve the dish straight from the skillet.

Red Wines

(Go for rustic, medium-bodied, and earthy wines with acidity)

  1. Nero d’Avola – Bold, dark, and native to Sicily — ideal pairing.
  2. Chianti Classico – Earthy and bright with enough acid to cut the richness.
  3. Etna Rosso – From volcanic Sicilian soil; elegant, minerally, and dry.
  4. Montepulciano d’Abruzzo – Soft tannins, black fruit, and perfect for sausage and potatoes.

White Wines

(If you want something lighter but still flavorful)

  1. Vermentino – Crisp, herbal, and citrusy — great contrast to sausage and peppers.
  2. Grillo – A Sicilian white; dry, mineral, and lightly fruity.
  3. Falanghina – Lively acidity with floral and apple notes; pairs well with olive oil-rich dishes.

Non-Alcoholic Pairings

  1. Sparkling Blood Orange Juice (or San Pellegrino Aranciata Rossa) – Sweet, bitter, and citrusy — refreshes your palate between bites.
  2. Iced Lemon-Basil Tea – Herbal and tangy, brings a bright note to balance the heaviness.
  3. Cucumber Sparkling Water with Mint – Ultra-refreshing and palate-cleansing.

Optional Dessert Pairings

(If you’re finishing with something sweet)

  1. Ricotta Cannoli with Pistachio – Creamy and classic.
  2. Lemon Olive Oil Cake – Light and citrusy to end on a fresh note.
  3. Almond Biscotti with Espresso – Rustic and satisfying.
