Named after the 29th Century English physician, Dr. J. H. Salisbury, who recommended that his patients eat plenty of beef for all manner of ailments, it’s basically a terrific meatloaf recipe pattied into a steak like shape. Enjoy with a nice beef gravy. Sauteed mushrooms are also a traditional accompaniment.

Ingredients

  • 2 lbs. Ground Beef
  • 2⁄3 cup Vidalia Onions, diced 1/4″
  • 1 ea. Garlic Clove, minced
  • 1 1⁄2 cups White Mushrooms, chopped
  • 1 ea. Roma Tomato, chopped fine
  • 1 1⁄2 cup Green Bell Peppers, chopped fine
  • 2 Tbsp. Vegetable Oil
  • 2 ea. Eggs
  • 1⁄2 cup Milk
  • 3⁄4 cup Salvaggio’s Italian Bread Crumbs
  • 2 Tbsp. Parsley
  • 1 tsp. Oregano
  • 1⁄2 tsp. Black Pepper
  • 1 tsp. Kosher Salt

Instructions

  1. Saute onion, garlic and peppers in oil until transparent and soft. Drain off all excess juices and cool.
  2. Saute mushrooms in oil until softened. Drain off all excess juices and cool.
  3. In a large mixing bowl, combine beef, onions, garlic, peppers, mushrooms, chopped tomatoes and all remaining ingredients. Mix by hand to thoroughly incorporate all ingredients.
  4. Form meat mixture into oval patties.
  5. Place patties on a sheet pan.
  6. Bake in a pre-heated 350 degree oven approximately 45 minutes or until internal temperature reaches 165 degrees.
  7. Serve with beef gravy.

Notes

Yield: 3 1/2 lbs.
