This hearty and flavorful Lasagna Soup is a deconstructed take on the traditional lasagna, turning it into a rich, comforting bowl of soup. Featuring Italian sausage, Nino Salvaggio’s Marinara Sauce, tender lasagna noodles, and a touch of cream, it's finished with a dollop of ricotta for that perfect creamy topping. Ingredients

  • 32 oz chicken stock
  • 50 oz Nino Salvaggio Marinara Sauce
  • 5 links Nino’s Plain Italian Sausage (casing removed)
  • ½ cup diced Vidalia onion
  • 3 tbsp chopped garlic (fine)
  • ¾ cup olive oil
  • ¾ cup heavy cream
  • 3 tbsp fresh basil (chopped garden leaf variety)
  • ½ cup red wine
  • To taste salt & pepper
  • ½ lb lasagna noodles, cooked al dente and strained
  • 1 tbsp ricotta cheese (per serving)

Instructions

  1. Sauté Aromatics & Sausage:
    In a large pot, heat the olive oil over medium heat. Add chopped onions and garlic; sauté for 2 minutes. Add the Italian sausage (removed from casings), and cook until browned. Season with salt and pepper. Add the red wine and cook for an additional 3 minutes.
  2. Simmer Soup Base: 
    Pour in the chicken stock, marinara sauce, and heavy cream. Stir well and bring to a simmer. Let it cook for about 15–20 minutes to blend the flavors.
  3. Prepare Noodles:
    While the soup simmers, cook the lasagna noodles al dente in a separate pot. Drain, let cool slightly, then chop into spoon-sized pieces.
  4. Assemble & Serve:
    Add the chopped noodles to the soup just before serving. Ladle soup into bowls and top each serving with 1 tablespoon of ricotta cheese and a sprinkle of fresh basil.
