Irish Soda Bread
Irish Soda Bread is basically a loaf style biscuit. You may be fooled into thinking that this bread would have the taste of baking soda or that baking soda is the sole leavening agent but that isn’t really true. The baking soda and the “acids” present in the buttermilk create the same leavening power that baking powder does in other recipes. As such, in this recipe anyway, you can not substitute milk for buttermilk….It’s more than just a taste thing.

- 4 cups All Purpose Flour
- 1 1⁄2 tsp. Baking Soda
- 1 tsp. Salt
- 1 Tbsp. Sugar
- 1 1⁄2 Tbsp. Caraway Seeds
- 1 cup Raisins
- 1 3⁄4 cups Buttermilk
- 2 Tbsp. Butter
- Pre-heat oven to 375 F. And have a non-stick cookie sheet available.
- Sift together 4 cups flour, baking soda and salt into a large bowl and stir in sugar, caraway and raisins. Add buttermilk and stir just enough until the dough is evenly moistened but still lumpy.
- Transfer dough to a well floured surface and gently knead with floured hands for a minute to form a soft but slightly less sticky dough. Halve the dough and form 2 balls. Pat out each ball into a domed 6″ round shape and place each on the cookie sheet, side by side.
- Cut a 1/2″ deep “X” on the top of each loaf with a sharp knife then brush the loaves with the melted butter.
- Bake in the 375 F oven until golden brown and the bottoms of the loaves sound hollow when tapped (approximately 35 to 40 minutes). Transfer loaves to racks to cool completely.
