Sweet, savory, creamy, and fresh, this Fig & Prosciutto Salad brings together some of the best flavors of the Mediterranean. Ripe figs and delicate prosciutto are layered with peppery arugula, creamy burrata, crunchy pistachios, Parmesan, and fresh basil, then finished with a simple dressing of extra virgin olive oil, balsamic glaze, honey, and lemon. Ingredients

5.5 ea Figs Green or Purple
8 oz Prosciutto
5 oz Arugula
1 ea Burrata Cheese
0.25 cup Pistachios Raw
7.5 oz Basil (Dry)
To Taste Salt – Coarse
3 Tbsp Extra Virgin Olive Oil
1 Tbsp Balsamic Glaze
1 Tbsp Honey
1 tsp Lemon Juice

Instructions

1. Prepare the figs by removing the stems and slicing them.
2. Arrange 8 slices of prosciutto on a serving plate.
3. Add 5 g of arugula on top of the prosciutto.
4. Tear 1 ball of fresh burrata and place it on the salad.
5. Sprinkle 1/4 cup of pistachios over the salad.
6. Add 1/2 cup of shaved parm to the salad.
7. Add 7-8 chopped basil leaves to the salad.
8. Season the salad with salt and pepper to taste.
9. Prepare the dressing by mixing 3 tbsp extra virgin olive oil, 1 tbsp balsamic glaze, 1 tbsp honey, and 1 teaspoon lemon juice.
