Calamari Fritto with Salvaggio’s Marinara Sauce

It just stands to reason that a good recipe for this classic should be in everyone’s recipe box. Here’s ours. Simple and delicious whether you serve it with the classic Marinara sauce, cocktail sauce or just with butter and lemon. MANGIA!!

Ingredients
- 1 Lb Calamari, cut in 1/4″ rings
- 2 cups Half and Half
- 1⁄2 Tbsp. Lemon Juice
- 1⁄2 Tbsp. Old Bay Seasoning
- 1⁄2 tsp. Granulated Garlic
- 1⁄2 tsp. Tabasco Sauce
- 1⁄2 pinch Black Ground Peppercorn
- 2 cups All Purpose Flour
- 1⁄2 Tbsp. Old Bay Seasoning
- – Salt & Pepper, to taste
- – Canola Oil, as needed for frying
- 24 oz. Salvaggio’s Marinara Sauce
Instructions
- Clean, rinse and drain calamari. Then cut into 1/4″ rings and cut any large tentacles in half.
- Place the calamari in a medium size bowl and add the Half and Half, lemon juice, Old Bay Seasoning, granulated garlic, Tabasco Sauce and the pinch of ground black pepper. Marinate in this mixture for 2 to 3 hours.
- Mix together All Purpose Flour, second quantity of Old Bay Seasoning and season with salt.
- Heat canola or vegetable oil in a sauce pan or deep fat fryer to 350 degrees F.
- Lift calamari from the Half and Half marinate and drain off any excess liquid. While still wet, dredge calamari in the seasoned flour mixture. Shake off excess flour that doesn’t stick to the calamari and immediately place in the hot oil to fry. Stir gently while frying to fry evenly for approximately 2 to 3 minutes or until golden brown.
- Remove the fried calamari and drain off excess fat on absorbent paper towels. Season with salt and serve warm with heated Salvaggio’s Marinara Sauce or sauce of your choice.
