Pineapple Salad with Toasted Coconut and Sun-Dried Very Berry Mix
A salad that is also a terrific, chilled "salsa" style sauce for grilled meats & fish or even spicy chicken. The Brianna's Blush Wine Vinaigrette is also an excellent dressing all on its own.

- 1 ea. Nino's Pineapple, peeled and cored
- 1⁄2 cup Sweet Coconut Shreds, toasted
- 1⁄2 cup Sun-Dried Very Berry Mix
- 1⁄2 cup Green Onion, cut in small slivers
- 2 Tbsp. Cilantro, chopped
- 1 Tbsp. Ginger, peeled and minced
- 1⁄2 cup Brianna's Blush Wine Vinaigrette Dressing
- Combine all ingredients and toss.
