Chilled Berry Medley Soup
Serves 4
One of my favorite chilled soups, this Chilled Berry Medley Soup can be frozen for months and thawed for service anytime. Among the best garnishments for this soup are: Sweetened sour cream, Toasted Nuts, Fresh Peaches or Plums.

  1. 1 cup Raspberries
  2. 1 cup Blackberries
  3. 1 cup Blueberries
  4. 2 cups Strawberries
  5. 1⁄2 cup Brown Sugar
  6. 1⁄2 cup Granulated Sugar
  7. 1 cup Water
  8. 1 Tbsp. Ginger Root
  9. 1⁄4 cup Lemon Juice
  10. 1⁄4 cup Ground Cinnamon
  11. 1 pinch Ground Cloves
  12. 1 pinch Ground Nutmeg
  13. 3⁄4 cup Port Wine
  1. Place all ingredients except Port Wine in a sauce pan and bring to a simmer.
  2. Remove from heat and allow to cool.
  3. Blend all ingredients in a blender and strain well.
  4. Stir in Port Wine.
  5. Chill and serve with or without garnishments.
