Chilled Berry Medley Soup

One of my favorite chilled soups, this Chilled Berry Medley Soup can be frozen for months and thawed for service anytime. Among the best garnishments for this soup are: Sweetened sour cream, Toasted Nuts, Fresh Peaches or Plums.
Ingredients
- 1 cup Raspberries
- 1 cup Blackberries
- 1 cup Blueberries
- 2 cups Strawberries
- 1⁄2 cup Brown Sugar
- 1⁄2 cup Granulated Sugar
- 1 cup Water
- 1 Tbsp. Ginger Root
- 1⁄4 cup Lemon Juice
- 1⁄4 cup Ground Cinnamon
- 1 pinch Ground Cloves
- 1 pinch Ground Nutmeg
- 3⁄4 cup Port Wine
Instructions
- Place all ingredients except Port Wine in a sauce pan and bring to a simmer.
- Remove from heat and allow to cool.
- Blend all ingredients in a blender and strain well.
- Stir in Port Wine.
- Chill and serve with or without garnishments.
