The Hemingway Mojito
One of my personal favorite summertime drinks. This recipe was first discovered by me in a NYC Cuban restaurant near Times Square. The Pink Grapefuit juice actually accentuates the lime juice and the grenadine gives this drink a very tropical look.

- 1⁄2 each Fresh Lime
- 3 sprigs Fresh Mint
- 2 Tbsp. Granulated Sugar
- 1⁄4 cup Pink Grapefruit Juice
- 1⁄4 cup White Rum
- 1 Tbsp. Grenadine Syrup
- 1⁄3 cup Club Soda
- 1 sprig Fresh Mint
- 1 cup Ice
- In a sturdy glass or cocktail shaker muddle together lime, the first quantity of mint leaves and sugar.
- Add pink grapefruit juice and rum then stir.
- Strain the Mojito mixture over a tall glass filled with ice, then add the Grenadine syrup, the club soda and a sprig of fresh mint for garnish.
