Pineapple Salad with Toasted Coconut and Sun-Dried Very Berry Mix
Serves 4
A salad that is also a terrific, chilled "salsa" style sauce for grilled meats & fish or even spicy chicken. The Brianna's Blush Wine Vinaigrette is also an excellent dressing all on its own.

Ingredients
  1. 1 ea. Nino's Pineapple, peeled and cored
  2. 1⁄2 cup Sweet Coconut Shreds, toasted
  3. 1⁄2 cup Sun-Dried Very Berry Mix
  4. 1⁄2 cup Green Onion, cut in small slivers
  5. 2 Tbsp. Cilantro, chopped
  6. 1 Tbsp. Ginger, peeled and minced
  7. 1⁄2 cup Brianna's Blush Wine Vinaigrette Dressing
Instructions
  1. Combine all ingredients and toss.
