Bistro Salmon Salad
Description:

A terrific Entree salad which works well with salmon, tuna or even shrimp! My choice of greens here is romaine but our Spring mix works equally well. As for dressings, I prefer our Creamy Maytag Blue Cheese, American Ranch or Spicy Honey Mustard.

Ingredients for 6 Portions:
3 lbs. Salmon Fillet
6 each Roma Tomatoes
1 cup Fresh Fennel
8 medium Red Skin Potatoes
1 each English Cucumber
1 cup Red Onion
1 Tbsp. Fresh Dill
1.50 tsp. Paprika
0.50 tsp. Celery Seed
0.50 tsp. Black Pepper
0.50 tsp. Fennel Seed
1.50 tsp. Parsley Flakes
1 pkg. Ninos Hearts of Romaine Lettuce Mix
2 12 oz Bottles Dressing of Choice
Portions:
Preparation
  1. Cut salmon into 1" pieces and place on a non-stick baking pan.
  2. Mix together dry seasonings and season salmon pieces then bake in a pre-heated 350 F approximately 15 to 20 minutes or until salmon is juct cooked through. Remove from the oven and chill well.
  3. In a large salad bowl, toss together all vegetables, romaine and dressing.
  4. Garnish with chilled salmon and serve.
