Known as the meat of the vegetable world, edible mushrooms are used extensively in recipes of nearly every culture.

Most mushrooms, which are sold in supermarkets, have been commercially grown on mushroom farms. The most popular of these, Agaricus bisporus, are safe for most people to eat because they are grown in controlled, sterilized environment.

Many varieties of the A. bisporus are cultivated commercially, including the ever popular Whites, Crimini, Portobello, Shiitake, Maitake or Hen-of-the-Woods, Oyster, and Enoki.

In recent years increasing affluence in developing countries has led to a considerable growth in interest in mushroom cultivation, which is now seen as a potentially important economic activity for small farmers. Currently, China is the world’s largest commercial mushroom grower producing over 6 billion pounds yearly.

The saying goes that “Every mushroom is edible…once.”

This of course is meant to remind people that not all mushrooms are edible. In fact, as most everyone knows, some are downright poisonous. Which, is why mushroom hunting in the wild can be a very risky proposition. Of course that doesn’t stop the thousands of avid Michigan Morel mushroom hunters who flock to our northern woods each spring to gather their share of the annual bounty.

Considered one of Michigan’s culinary treasures, Michigan Morel mushrooms are coveted by mushroom lovers, not just in Michigan, but globally! Even local chefs fight over the first harvests and create all sorts of culinary specialties in honor of this pungent delicacy. And due to their short season and relatively limited supply, you can always count on paying a handsome price at local markets and restaurants while they are available.
