Fresh Flavor Fillets™

 Nino’s “Fresh Flavor Fillets™” are a terrific way to experience the many interesting and delicious fish that we pre-prepare for your convenience with our own recipes of prepared stuffings, marinades, rubs and seasonings.

This delicious Fresh Salmon Entrée is best prepared using the SHALLOW PAN FRY method.

Shallow Pan Fry
In a medium size non-stick (Teflon) sauté or frying pan, add approximately a ¼ inch depth of Canola, Vegetable or Corn Oil. Bring the oil to a medium to medium high heat (350 F to 360 F). Place the fillet/s in the hot oil and pan fry on each side approximately 3 to 3 ½ minutes or until medium brown on both sides. Once browned on both sides, remove from the pan and place on absorbent paper towel briefly to absorb any excess oil. Season with salt and pepper and serve.

Additional Information:
Fish will be fully cooked when a small incision in the thickest part of the fillet is able to flake the flesh, it is no longer translucent but fully opaque in color, and the fillet is firm. Remove the fillet from the pan and place on a serving plate.

This Tuscan Salmon Entrée goes wonderfully with a chilled, Fresh Pesto Crème Sauce
To make sauce, use a food processor, and blend the following ingredients until smooth: 1 Cup each of Mayonnaise, Sour Cream and Fresh Basil Leaves with 1/2 cup of Grated Parmesan Cheese, 1/4 Cup of Toasted Pine Nuts, 1 TBSP of Minced Fresh Garlic and Salt and Pepper to taste. Serve approximately 2 TBSP of Sauce over each fillet.
