Black Bean and Rice Salad
Serves 8
This recipe is a unique departure from traditional lettuce salads. Enjoy it served with grilled chicken, fish or seafood.

Ingredients
  1. 1 cup Dry Black Beans
  2. As Needed Water to Soak
  3. 2 cups Long Grain Rice, cooked, chilled
  4. 1 Green Bell Pepper, finely chopped
  5. 1/2 Red Bell Pepper, finely chopped
  6. 1 Tomato, seeded & chopped
  7. 2-3 Green Onions, finely chopped
  8. 3 Tbsp. Olive Oil
  9. 2 Tbsp. Lime Juice
  10. 1/2 tsp. Dijon Mustard
  11. 1/2 tsp. Sugar
  12. 1/4 tsp. Ground Cumin
  13. 1/4 tsp. Ground Black Pepper
  14. Fresh Chopped Parsley or Cilantro for garnish, if desired
Instructions
  1. Cook beans until tender, strain, rinse and cool.
  2. Combine beans with rice, green and red bell pepper, tomato and green onion.
  3. In a small bowl, whisk together the oil, lime juice, mustard, sugar, cumin and pepper.
  4. Add dressing to the beans and rice and stir gently to blend ingredients.
  5. Garnish with parsley or cilantro and serve chilled.
